Originally from an old farming family on the Causse Noir, Paul-Marie is a dynamic, organised and enterprising fifty-year-old French citizen who has been retraining for a new career since 2014.
He has thrown himself into organic market gardening like a flower: at an altitude of almost 700 metres in Montjaux, he produces only fruit and vegetables of ancient and hardy varieties, with exceptional taste and nutritional qualities, because he grows them in the open field, without tarpaulins or greenhouses, without hybrids or any plant protection products.
